
The harvest
The harvest provides the nexus between the vineyards and the making of the wine. Much time is spent on analysis of the fruit to ensure the correct level of sugar ripeness (correct sugar-acid balance) and phenolic ripeness (correct tannic structure of the seeds and skins) exists to provide perfect fruit.
A high degree of co-ordination is also needed to ensure that the cellar is ready to receive the harvest, which happens over a period of weeks. Once at the cellar the grapes are cooled to protect the flavour and finally each and every grape is hand sorted to eliminate anything unwanted such as unripe berries.
